Is there anything better than some fresh, homemade guacamole? I may be a little biased, but I think my version is the best.

Homemade Guacamole from Cosmopolitan Cornbread

To make this simple treat, begin by mincing about a third of a cup of red onion. Toss those in a bowl with a small tomato, that has been seeded and diced, and a clove of grated garlic.

Next, you’ll need three avocados. Split them open and score the insides with a knife.

Scoop the meat out with a spoon into the bowl.

Sprinkle in about 3/4 teaspoon of kosher or sea salt

Then add a pinch of cayenne pepper and a big pinch of cumin.

Mash this all together with a fork, until it is the consistency that you like.

Finally, juice a lime into the bowl. I like the juice of a whole lime, but start with half, stir it in, and give it a taste. If you want more, go for it and juice the other half as well.

Enjoy your delicious guac any way you like it. For dinner tonight I made some chicken and bacon quesadillas. The guacamole was scrumptious with them.

Ingredients
  

  • 1/3 c minced red onion
  • 1 clove garlic, grated
  • 1 small tomato, seeded and diced
  • 3 avocados
  • 3/4 teaspoon kosher salt
  • 1 pinch cayenne pepper
  • 1 big pinch cumin
  • juice of a lime

Instructions
 

  • In a bowl, combine the red onion, garlic, and tomato.
  • Half and score your avocados and spoon the meat into the bowl. Add in the salt, cayenne, and cumin.
  • Mash everything together with a fork, until it is the consistency that you like.
  • Add in the lime juice – start with half, stir together, and give it a taste.
  • Add all of the lime juice if you like (I do!)
  • Enjoy.

  1. So, I'm scrolling down the page reading and checking out the photos. I never made it (back) to the final shot when I decided — that's it, I'm going to drink a cup of coffee and have this guacamole recipe for breakfast today. Wonderful! (And I hope you enjoyed the quesadillas!)
