The holidays are winding down, and the food and feasts have been amazing – but we have one left to go! So for New Year’s we are having a Potluck Party with Emeril!

You all know him, so much so that he almost needs no introduction. Emeril Lagasse. You’ve seen him on Food Network, seen his cookbooks or maybe seen some of his cookware in your local store’s kitchen section. Maybe you’ve even prepared some of his delicious recipes in your own kitchen.

This week, in conjunction with our Sunday Supper event, a number of the contributors, including myself, will be featuring recipes from two of Emeril’s cookbooks: “Emeril’s Kicked Up Sandwiches: Stacked with Flavor” and “Emeril’s Potluck: Comfort Food with a Kicked Up Attitude.” And by the way’ you’ll have the opportunity to win one of these!

I find that at times during the holidays, with all of the feasts and get-togethers that some days I’ll need to take a break and make something simple for dinner. Today I’m sharing Emeril’s Columbia Street Grinder. This sandwich is simple to make, but with lots of flavor. My family is satisfied with a great meal, yet I didn’t have to stand over the stove all afternoon! I can sit down and relax, enjoy a meal, and remember the “V word” in Christmas Vacation.

You can much more simple than a sandwich like this. You just toss it together, sit back and crunch into the loveliness.

  • 4 6-inch loaves Portuguese stick bread, or Italian, or French Loaves
  • Balsamic-Herb Vinaigrette (You can find a recipe for this in the cookbook)
  • 8 ounces sliced Provolone Cheese
  • 8 ounces sliced mortadella
  • 8 ounces sliced spicy ham, such as capicola
  • 8 ounces sliced salami
  • 1 large ripe tomato, cut into eight ¼ inch thick slices
  • 12 thin onion slices
  • 12 jarred hot or sweet cherry peppers, drained and roughly chopped
  • 2 cups torn green-leaf lettuce
  1. Cut the loaves of bread in half lengthwise, and arrange them in a single layer, cut sides up. Liberally brush the bread wit the vinaigrette. On the bottom half of each loaf, evenly layer one quarter of the provolone, followed by one-quarter of the mortadella, one-quarter of the spicy ham, and one-quarter of the salami. Top with 2 slices of tomatoes, and 2 slices of onion. Divide the cherry peppers among the sandwiches. Stir the vinaigrette and generously drizzle it over the onion and tomato.
  2. In a small bowl, toss the torn lettuce with some of the remaining vinaigrette. Divide the lettuce among the 4 sandwiches, top with the other halves of the bread, and serve.

    Wow. What a great sandwich. I have sent my husband to the deli. Since today is meatless Monday, we will be having them on Tuesday night along with a Caesar (the drink, not the salad) and an assortment of raw veggies. You really are giving us some great recipes. Keep it up.
