The hot paprika in this recipe gives the stew a nice kick. If you are concerned about spice however, feel free to substitute regular paprika instead.

Beef & Brew Vegetable Stew

Ingredients
  

  • 2 lb cubed beef stew meat
  • 1 teaspoon salt, divided
  • 1 teaspoon black pepper, divided
  • 3 Tb unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves minced garlic
  • 15 oz diced tomatoes
  • 2 Tb Worcestershire sauce
  • 1/2 teaspoon hot paprika
  • 32 oz beef broth, or beef stock
  • 12 oz lager style beer
  • 5 parsnips, cleaned & roughly chopped
  • 4 carrots, cleaned & roughly chopped
  • 2 c frozen green beans, or fresh if they are in season, trimmed and halved

Instructions
 

  • To begin, sprinkle the stew meat with 1/2 teaspoon each of the salt & black pepper.
  • In a Dutch oven or other large soup pot, melt the butter over medium high heat. Add the beef and cook until it is browned.
  • Remove the beef to a dish for the time being.
  • In the Dutch oven, sauté the diced onion and garlic in the butter & drippings over medium heat until tender.
  • Add in the browned beef, diced tomatoes, Worcestershire sauce, hot paprika, beef broth, and beer as well as the remaining 1/2 teaspoon each of salt & black pepper. Stir together.
  • Bring the stew to a boil, reduce the heat to a simmer. Cover and cook for 1 1/2 hours or until the meat is tender.
  • Add in the carrots, parsnips, and green beans and continue to cook until they are tender.
  • Enjoy!

  1. Just double checked this recipe and it does have beer in it….well I don’t drink beer and doubt you can just buy one can !!! Any ideas for a substitution ? My Son-in-law is a Pastor and he would not eat it if he knew it had beer in it….. even tho they say the alcohol is cooked out, I still doubt he would eat it….. I have tasted it when my husband would drink one, but I think it taste terrible…..but heard it is good in cooking…..never used it tho in any cooking I have done…. so just omit it or add something else ???? I will wait for your answer….lol

    P.S. Just want to tell you my Son-in-law just won a Brand New Ford, from a Ford Dealer…..what good news that was…..they are so thankful …..so thank God for letting him win this car….:)

    • You can often buy single bottles of beer now at stores. I know of several stores around here that have coolers of single bottles now. I hate the taste of beer, but the stew is rich and yummy :) I’ve read that you can use ginger ale as a beer substitution in cooking, but I have never tried it. I think I would simply just omit it in this case.

  2. I am definitely loving this recipe! I love cooking with alcohol whether it’s wine, beer, hard cider or guinness! I can just imagine dipping some freshly baked bread into this stew!

  3. I usually use normal paprika but only because didn’t know about hot paprika! This is the kind of stew I love to have in the evening, nothing better than a comforting stew after a long day at work!
