Pizza Stew is a fun supper to make, taking the flavors of a pizza and making them into a quick & easy stew.

Serves: 5-6 servings
  • 4 ounces small to medium pasta
  • 2 Tb coconut oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 lb ground chicken
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 2 cups marinara sauce
  • 2 cups beef broth
  • 1 tsp oregano
  • 1 tsp marjoram
  • 1 tsp parsley
  • 1 pinch cayenne pepper
  • ⅔ cup pepperoni, diced or julienned
  • shredded Parmesan for serving
  1. To begin, start a medium pot of water to cook your pasta in.
  2. In a Dutch oven, melt the coconut oil over medium heat.
  3. Toss in the pepper and onion. Cook until these are tender and the onion is just starting to get golden on the edges.
  4. Add in the ground chicken. Break it up and cook until it is no longer pink.
  5. Add in the remaining ingredients. Stir all together. Cover and simmer on low heat.
  6. Cook the pasta to al denta while the stew simmers.
  7. Add the cooked pasta to the stew, stir.
  8. Serve the stew topped with a sprinkling of Parmesan cheese, and some nice bread if you like.
