Today, the contributors are getting H. O. T. for a “Spice It Up!” Sunday Supper. Not only is it August – and I’m dying here in my Alabama weather (Read: Not Alaska anymore!) – But we’re bringing all sorts of way to turn up the heat for your next dish. I’m bringing you a “2-fer!” Two different seasoning blends Cajun and Creole – that are staples in our house, and too easy to make to be running to the store to buy them pre-done.
You really can’t get more simple than these seasoning blends, and a great perk to making your own blends like this rather than getting the store-bought kind, is you can control the salt in your seasoning.
For the Cajun Seasoning, you combine nothing more difficult that some salt, oregano, cayenne pepper, black pepper and paprika.
Put them all in a jar and shake to combine. Store it in an airtight container and use it as needed.
For the Creole seasoning – there are a few more ingredients, and this makes a bit more. Salt, onion powder, garlic powder, dried oregano, sweet basil, thyme, black pepper, cayenne pepper, white pepper, celery seed and paprika.
Because there is a bit more to this, I put it all in a bowl and whisk it until it is well combined.
If you want a find powder seasoning, you can blend this in a food processor, but I find that this is more than sufficient for my tastes.
Store it in an airtight jar and use these as needed. the other day, I shared on Instagram, that I had made creole grilled pork chops. I used this seasoning as a rub on some pork chops, let them sit for a few minutes and then grilled them. Words can not suffice. You must try it yourself!
- ⅓ c Paprika
- 2 Tb onion powder
- 2 Tb garlic powder
- 2 Tb oregano
- 2 Tb sweet basil
- 1 Tb thyme
- 1 Tb black pepper
- 1 Tb white pepper
- 1 Tb cayenne pepper
- 1 Tb salt
- 1 Tb celery seed
- Combine all and whisk until well mixed (or pulse in a food processor for a fine powder seasoning.) Store in an airtight container, use as a rub or any other way you like.
- 2 Tb Salt
- 1½ tsp Paprika
- 1½ tsp Cayenne Pepper
- 1½ tsp Black Pepper
- 1½ tsp Oregano
- Toss them all in the jar. Put the lid on and shake. Store the seasoning in your closed jar, in your cupboard.
Now grab yourself an ice cold sweet tea and a handkerchief to mop your brow and get your spice on with Sunday Supper!
