How to make good old-fashioned faux sourdough waffles. They have the “twang” of sourdough without actually having a fermented starter.

Before I go into the recipe, I remembered a funny little story involving waffles that I wanted to share.

Many years ago, when we lived in Germany, I was babysitting a friend’s little girl. They had some sort of very-early-in-the-morning appointment, so she just spent the night and stayed with my little girl.

The next morning, they got up and I decided to make them waffles for breakfast. The little girl was so excited for waffles!

Our kitchen, at the time, had an open area that looked from the dining room into the kitchen, and I had a little picnic table sitting there that my kids would stand on and talk to me while I was cooking.

Jennifer and this little girl climbed on the bench to watch me prepare the waffles…when the little girl curled up her nose and said, “That’s not how my mom makes waffles.” She kind of pulled back and made this face like, “What on earth is THAT!”

I looked at her and thought a moment. Then I said, “Does your mommy’s waffles come out of the freezer?”

She looked at me and nodded her head. Eggos!

When I pulled the first waffle from the waffle iron, she exclaimed, “They really are waffles!”

Thankfully my waffles met the approval of her discerning taste buds.

How to Make Waffles

In a mixing bowl, start with 3 eggs.

Now in a measuring cup add 1 Tablespoon of lemon juice or white vinegar

Pour in enough milk to make 1 1/2 cups.

Give those a quick mix and add 1 teaspoon baking soda, a tablespoon of baking powder, and a half teaspoon of salt.

Mix in 1 3/4 cups flour.

Mix those until smooth then stir in 1 1/2 teaspoon vanilla…

And about 3/4 teaspoon cinnamon. Stir in.

Lastly, stir in 1/2 cup (1 stick) melted butter.

Now, simply make the waffles in accordance to your waffle maker’s instructions.

  • Prepare the soured milk and set aside. (See note)
  • In a mixing bowl, beat the eggs.
  • Add in the vanilla extract and soured milk.
  • In another bowl, combine the dry ingredients then mix them into the milk mixture. Whisk until smooth.
  • Mix in the melted butter.
  • There you have it. Now make them according to your waffle-maker instructions.
  • Enjoy!

Notes
