This time of year I love to bake goodies for my family to enjoy.

Sometimes you find yourself in the mood for some cookies, but what do you do when you can’t decide between peanut butter, oatmeal, and chocolate chip cookies?

Easy! Make them all at the same time in this skillet cookie.

This is the perfect recipe for when you don’t want to have too many cookies laying around tempting you. The skillet makes a much smaller quantity than a great big cake pan full.

Ingredients
  

  • 1 1/2 c all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1/2 c unsalted butter, 1 stick, room temperature
  • 1 1/2 c brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 Tb milk
  • 1 c old-fashioned oats
  • 3/4 c chocolate chips, semi-sweet or dark
  • 1/2 c finely chopped pecans
  • 2/3 c peanut butter, creamy or chunky, you can decide
  • Optional – vanilla ice cream for serving as a dessert

Instructions
 

  • To begin, preheat your oven to 325 degrees.
  • Spray a 10-inch cast iron skillet with baking spray – the type of spray that contains flour. If you don't have any, simply grease the skillet with butter or shortening, then dust with flour.
  • In a bowl, stir together the flour, baking powder, and salt. Set this aside.
  • In your mixing bowl, beat together the butter and sugar until fluffy.
  • Beat in the egg and vanilla extract.
  • Add half of the flour mixture to the butter mixture and mix until combined.
  • Stir in the milk.
  • Add in the remaining flour mixture, mix until combined. Scrape the bowl with a rubber spatula to make sure everything is combined.
  • Add in the oats, chocolate chips, and pecans. Stir until combined.
  • Spread half of your dough into your prepared skillet. Press it into the skillet. This works best if you wet your hands then press the dough down. The dough will not stick to your damp hands.
  • Spread the peanut butter over the top of the dough.
  • Carefully spoon the remaining dough over the top and press id down again with damp hands.
  • Bake this for 35 minutes, uncovered. Loosely cover the skillet with foil and bake for an additional 10 minutes.
  • If you are serving this as a dessert, allow it to cool for 20 minutes before serving with ice cream. If you have prepared these as snack bars, allow it to cool completely before cutting. These bars are moist, rich, and tender.

  1. Yum, this skillet cookie recipe looks yummy:) Have everything except choc.chips, I have white choc. chips and Butterscotch chips…guess I could try either or both of those eh ?

    BTW, have you been able to hear from your son, and how is he doing ?
