Today I have the next recipe in the summer grilling series that I have teamed up with Sweet Sunshine Sauces to bring you.

To begin, slice a flank steak into thin slices, about 1/3 of an inch thick.

Once the steak is sliced, grab a bundle of bamboo skewers that you have soaked in water.

Weave the slices onto the skewers.

Next grab some beautiful summer zucchini and cut into 1/4 inch thick slices.

Lightly brush both sides with a little olive oil and sprinkle with salt & pepper.

Do the same with an eggplant, slicing crossways.

Heat your grill to 400 degrees. Place all of your beautiful goodies on the grill.

Cook these lovelies for about 4 minutes and turn over.

Brush the skewered beef with some Sweet Sunshine Sauce’s Sweet sauce and cook for another 4 minutes on that side or until cook to desired doneness.

Last week, I used the Atomic version. This week I steered away from the heat and went for their Sweet sauce. While the sauce was sweet, it wasn’t over the top “bottle full of sugar” sweet. It had a beautifully rich flavor that went perfectly with the tender beef and grilled vegetables.

Ingredients
  

  • 2 lb flank steak
  • 2 medium zucchini

  • salt & pepper
  • Sweet Sunshine Sauce's Sweet sauce, or other sweet bbq sauce, such as a hickory brown sugar

  • To begin, slice a flank steak into thin slices, about 1/3 of an inch thick.
  • Once the steak is sliced, grab a bundle of bamboo skewers that you have soaked in water. Weave the slices onto the skewers.
  • Next grab some beautiful summer zucchini and cut into 1/4 inch thick slices.
  • Lightly brush both sides with a little olive oil and sprinkle with salt & pepper.
  • Do the same with an eggplant, slicing crossways.
  • Heat your grill to 400 degrees.
  • Place all of your beautiful goodies on the grill.
  • Cook these lovelies for about 4 minutes, and turn over.
