Beef Skewers with Grilled Vegetables

To begin, slice a flank steak into thin slices, about 1/3 of an inch thick.

Once the steak is sliced, grab a bundle of bamboo skewers that you have soaked in water.

Weave the slices onto the skewers.

Next grab some beautiful summer zucchini and cut into 1/4 inch thick slices.

Lightly brush both sides with a little olive oil and sprinkle with salt & pepper.

Do the same with an eggplant, slicing crossways.

Heat your grill to 400 degrees. Place all of your beautiful goodies on the grill.

Cook these lovelies for about 4 minutes, and turn over.

Brush the skewered beef with some Sweet Sunshine Sauce’s Sweet sauce, and cook for another 4 minutes on that side or until cook to desired doneness.

Sweet Sunshine Sauces are the creation of Paul Sarris and have 62 International awards including the 2014 Scovie Award.

Last week I used the Atomic version. This week I steered away from the heat and went for their Sweet sauce. While the sauce was sweet, it wasn’t over the top “bottle full of sugar” sweet. It had a beautifully rich flavor that went perfectly with the tender beef and grilled vegetables.

Beef Skewers with Grilled Vegetables
Perfectly grilled skewers of flank steak, paired with the best of grilled summer vegetables.

Ingredients

  • 2 lb flank steak
  • 2 medium zucchini
  • 1 egg plant
  • olive oil
  • salt & pepper
  • Sweet Sunshine Sauce's Sweet sauce (or other sweet bbq sauce, such as a hickory brown sugar)

Instructions

  1. To begin, slice a flank steak into thin slices, about 1/3 of an inch thick.
  2. Once the steak is sliced, grab a bundle of bamboo skewers that you have soaked in water. Weave the slices onto the skewers.
  3. Next grab some beautiful summer zucchini and cut into 1/4 inch thick slices.
  4. Lightly brush both sides with a little olive oil and sprinkle with salt & pepper.
  5. Do the same with an eggplant, slicing crossways.
  6. Heat your grill to 400 degrees.
  7. Place all of your beautiful goodies on the grill.
  8. Cook these lovelies for about 4 minutes, and turn over.
  9. Brush the skewered beef with some Sweet Sunshine Sauce’s Sweet sauce, and cook for another 4 minutes on that side or until cook to desired doneness.
