This simple skillet dinner with sweet potato, ground beef, apple, and spinach is one of my favorite “any night” dishes.

To make this recipe you will need:
- ground beef
- red onion
- sweet potato
- green apple
- spinach
- salt
- black pepper
- chili powder
- oregano
- cinnamon
- red pepper flakes
- garlic powder
- large skillet with lid

How to Make this Beef & Sweet Potato Dinner
In your large skillet, brown some ground beef for a couple minutes, breaking apart the meat with a wooden spoon or other utensil.
Add in diced red onion, diced sweet potato, salt, black pepper, chili powder, oregano, cinnamon, red pepper flakes, and garlic powder. Stir these together, cover, and cook for about 10 minutes, or until the sweet potatoes are just about tender. Stir occasionally.
Add in some spinach and a diced green apple. Cook for another minute or two, or until the sweet potatoes are fully tender and the spinach & apple bits are heated through.

Beef & Sweet Potato Dinner | Paleo
Ingredients
- 1 lb ground beef
- 1 c diced red onion
- 1 large sweet potato, peeled and finely diced (1/4 – 1/2 inch)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon oregano
- 1/2 teaspoon cinnamon
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon garlic powder
- 1 green apple (Granny Smith), cored & diced (peeled or unpeeled)
- 1 1/2 c fresh spinach leaves, or 3/4 c frozen spinach that is thawed and squeezed of excess liquid
Instructions
- In a large skillet with a lid, brown ground beef for a couple minutes, breaking apart the meat with a wooden spoon or other utensil.
- Add in diced red onion, diced sweet potato, salt, black pepper, chili powder, oregano, cinnamon, red pepper flakes, and garlic powder.
