This Caribbean Cream Cocktail will have you whisked away on a tropical vacation. At least in your imagination!

Now I know that coconut cocktails may seem more like summer, but I have to say that living in the South, Spring means SUMMER weather. I will forever be a snow bunny at heart and the second the weather turns warm, I am melting. And when I am melting, I want something cool and refreshing to drink, especially when it comes to a cocktail! This cool & creamy cocktail is the perfect thing too. Of course, if you want to save this for even hotter weather, feel free. But I’ll enjoy one of these now, thank you. And I’ll enjoy the air conditioning, too.
Simply toss the ingredients in your blender, give them a quick whirl, pour it in a glass and enjoy.

Caribbean Cream Cocktail
Ingredients
- ½ c vanilla ice cream
- ½ c coconut milk
- ½ c ice
- 2 oz coconut flavored rum
Instructions
- Combine all of the ingredients in your blender. Blend until smooth.
- Pour into a glass and enjoy!

The husband and I are not huge drinkers…But, yes please to coconut milk plus vanilla ice cream and rum! One of the few times I did drink was when I turned 18. My dad took me to the New Otani Hotel in Tokyo for a Coconut Caribbean Rum cocktail!
