Today I felt like making brownies, but I felt like doing something a little different.
I had some cashew butter in my pantry that I needed to use…and this definitely put it to good use with these Cashew Swirl Brownies.
To begin, preheat your oven to 325 degrees. Grease a 9×13 baking pan, and set it aside.
In a large saucepan, melt 2 cups of semi-sweet chocolate chips and 1 stick of butter over very low heat.
When it is melted, remove the pan from the heat, and allow it to cool a bit.
When it is just barely warm, stir in 3/4 cup each of brown sugar and granulated sugar.
In a dish, lightly whisk 4 eggs, then whisk them into the chocolate mixture.
Next, whisk in 1 cup of flour.
And finally, whisk in a teaspoon of vanilla and a half teaspoon of salt.
Spread the mixture in the pan, and then take about a third cup of cashew butter and dollop it all over the top of the batter.
Over the top, sprinkle a half cup of coarsely chopped cashews.
Last, take a butter knife, and run it through the batter, swirling the cashew butter all over the top.
Look at those gorgeous swirls!
Bake it in your oven for about 45 minutes, or until they test done with a toothpick.
Cool completely. If you can.
