I love making frostings that contain Mascarpone cheese. This frosting is light, fluffy, and creamy, but not ridiculously sweet.

Chocolate Mascarpone Frosting from Cosmopolitan Cornbread

Chill your mixing bowl and mixer attachment in your freezer for about 30 minutes prior to making this frosting. Then, in the chilled bowl, combine 1 cup of heavy cream

Half a cup of powdered sugar

4 ounces of Mascarpone cheese

2 Tablespoons of baking cocoa, and a Tablespoon of coffee liqueur

Turn your mixer on high and beat it until it is fluffy and stiff.

And then use it as desired! This makes enough for about 24 cupcakes, or a 9 inch 2- layer cake.
