Jack o'Lantern Cupcakes

Make these fun and yummy Jack o’Lantern Cupcakes with your kiddos.

Ingredients
  • 1 c flour
  • 1½ tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ⅛ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ⅛ tsp allspice
  • 2 eggs
  • 1 c granulated sugar
  • ⅓ c plain apple sauce
  • ⅓ c extra virgin olive oil
  • 1 c pumpkin puree
  • ⅓ c walnuts or pecans
  • Your favorite white frosting
  • orange food coloring
  • black fondant
Instructions
  1. To begin, preheat your oven to 350 degrees. Line a standard muffin pan with cupcake papers, and set it aside for now.
  2. In a bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg and of allspice. Stir these together and set it aside for a moment.
  3. In your mixing bowl, beat together the eggs, sugar, plain apple sauce, extra virgin olive oil and pumpkin puree.
  4. Add in your dry mixture and mix until it is smooth.
  5. Finely chop the walnuts or pecans and fold them into the batter.
  6. Scoop the batter into your muffin pan and bake for 16-18 minutes or until they test done with a toothpick. Remove them to a cooling rack and cool completely.
  7. When your cupcakes are cooled, it’s time to do some decorating.
  8. First, you will want to frost your cupcakes with your favorite white frosting. You could use a buttercream or a cream cheese frosting, whichever you prefer. I made buttercream frosting for these particular cupcakes. Mix some orange food coloring into the frosting before frosting the cupcakes. These are pumpkins after all.
  9. Pipe the frosting onto all of the cupcakes.
  10. Put a couple drops of cooking oil in your hands and rub them all over your palms and fingers to keep the fondant from sticking to you. Knead a little bit of fondant until it is soft and pliable.
  11. Roll it out on a smooth surface.
  12. With a knife, cut little triangles for eyes and little crescent mouths.
  13. Gently place the pieces on your cupcake.
  14. Repeat with all of the cupcakes. You can get creative with these if you like – making different expressions if you like.
