This French Onion soup is a delicious soup with caramelized onions and a rich broth.
To make Easy Homemade French Onion Soup, you will need:
- sweet onions
- unsalted butter (or ghee)
- garlic
- red wine
- fresh thyme
- bay leaf
- freshly ground black pepper
- sea salt
- beef broth
- water
- tapioca starch (flour)
- knife
- cutting board
- Dutch oven
- measuring spoons
To begin, peel and slice some sweet onions.
You’ll melt butter in a Dutch oven and add in the sliced onion.
Cook on low heat until the onions are beautifully golden and caramelized, about 30 minutes. Stir occasionally. The longer you cook the onions, the sweeter and more flavor they will have.
Add in minced garlic, and cook for just a minute.
Add in red wine, a bay leaf, thyme, salt, pepper and broth.
Bring it to a boil, reduce the heat and simmer for 20 minutes.
Discard the bay leaf and the thyme stems.
Whisk together the tapioca starch and the water. Add them to the soup. Let it cook for just a couple more minutes.
French onion soup is often served in a bowl with a large crouton on top, sprinkled with Gruyere cheese and then broiled. You can do that if you wish, but I find that this soup is just fine as it is.

- 1 bay leaf
- 1/2 tsp freshly ground black pepper

- 1 quart beef broth
- 1/4 c water
- 1 Tb tapioca starch (flour)
Instructions
