Wholesome and delicious homemade muffins with dried fruit and honey.
About 20 years ago, I began milling my own wheat for flour to use when baking breads or other goods. This is one of the many ways I use that freshly ground wheat.

These muffins are lightly sweetened with honey, and are filled with dried fruit. I like to use about a cup and a half of a dried fruit blend that I order from Azure Standard, but you can a little less, or add some chopped nuts if you like.
To Make This Recipe You Will Need:
- freshly milled wheat flour (I use hard white)
- baking powder
- baking soda
- salt
- cinnamon
- butter
- egg
- honey
- vanilla extract
- buttermilk
- mixing bowl
- spatula
- muffin pan(s)
- muffin scoop
- cooling rack

To begin, preheat your oven to 400°(F).
Line your muffin pan(s) with papers, or grease well with butter. This recipe will make 12 standard sized muffins. Set the muffin pan aside for now.
Combine freshly milled wheat flour, baking powder, baking soda, salt and cinnamon in a bowl. Stir it together. Set that aside for now.
In your mixing bowl, beat together buttermilk, honey, egg, and vanilla extract.
Mix in your dry ingredients.
Add in softened butter, and mix well. Be sure to scrape the sides of the bowl with a rubber spatula.
Stir in some dried fruit. I use a dried fruit blend from Azure Standard, that has raisins, dried peaches, pears, apricots, and apples. You can use whatever blend of dried fruits that you prefer.
Scoop the batter into your prepared muffin pan.
Bake for 15 minutes, or until the muffins are golden and test done with a wooden pick.
Cool the muffins on a rack until they are fully cooled, or at least almost completely cooled, if you are impatient.
Because I put so much dried fruit into these muffins, they can easily fall apart if you don’t let them cool well. But either way, you’ll love them.
