These tasty Apple Banana Pancakes with almond butter are a great way to start any morning. You’ll love how easy they are to make.

These pancakes are super easy to make. The batter whips up in your food processor and you can simply scoop it straight to your griddle or skillet from there.
To make Apple Banana Pancakes you will need:
- apple
- banana
- almond butter
- eggs
- arrowroot flour
- vanilla extract
- baking soda
- coconut oil for cooking
- non-stick skillet or griddle
- spatula
- food processor
To make your pancakes, turn your oven onto the “warm” setting and place a baking sheet inside to keep the pancakes warm as you cook them all.
Combine the apple, banana, almond butter, and eggs in a food processor. Pulse until it is smooth.
Add in the arrowroot flour/starch, baking soda, and vanilla.
Pulse the food processor to combine the ingredients. Scrape the inside of the container with a rubber spatula to make sure everything is combined.
Heat a non-stick griddle or skillet over medium-low heat and melt a tablespoon of coconut oil.
I often will cook pancakes in a cast iron skillet, however, these pancakes have a tendency to want to stick. Because of that, I highly recommend using a good quality, safe, non-stick skillet or griddle. If not, you may have a great big mess. Believe me, I learned that lesson the hard way.
Spoon the batter onto the griddle/skillet and cook for about 3 minutes on each side, or until they are golden brown on each side and cooked through.
Place the cooked pancakes in the oven to stay warm until you have cooked them all.
Serve your pancakes with syrup, some Apple Butter, fruit, or whatever your favorite topping is.
