Making your own breakfast sausage is easy with this seasoning blend. Use it with any ground meats and control the ingredients.
I most often make this recipe with ground turkey. Since I quit eating pork a while ago, breakfast sausage is something I found challenging.
Many of the store bought sausages, just didn’t have much flavor. So I simply made my own seasoning and mix it up myself!
This seasoning can be used for any ground meat that you would like to make sausage patties (or even sausage gravy) from.
For best results, mix this up the day before you plan to use it. That allows the flavor of the spices to marry with the meat.
To Make this Recipe You will Need:
- salt (good quality sea salt or kosher)
- ground sage
- dry thyme
- fennel seeds (optional)
- dry parsley
- black pepper
- garlic powder
- smoked paprika
- onion powder
- cayenne pepper, red pepper flakes, or hot paprika
- small jar with lid

To begin, you will simply combine all of the ingredients in a small jar.
When it comes to the “heat” ingredients, you can decide which you prefer and how much. I usually use about 1/4 teaspoon of hot paprika or cayenne pepper, but you can also use red pepper flakes.
Close the jar and shake well to combine all the ingredients.
To use this seasoning, combine 1 lb of ground meat (turkey, venison, beef, etc.) with about 1 1/2 Tablespoon of the seasoning.
Adjust the amount of seasoning according to your preference.
Gently mix together. Do NOT overmix the meat and seasoning.
For best results, refrigerate overnight so all the flavor can develop in the meat. Use any way you like to use bulk breakfast sausage.
If using a lean meat like turkey, I recommend adding some cooking fat to the skillet when you cook the meat. You could also even mix softened butter other fat into the meat when you add the seasoning.

Ingredients
- 1/4 c salt, kosher or sea salt
- 1 Tb ground sage
- 1 Tb dry thyme
- 1 Tb fennel seeds, (optional)
- 1 1/2 teaspoon dry parsley
- 3/4 teaspoon garlic powder
- 3/4 teaspoon black pepper
- 3/4 teaspoon smoked paprika
- 1/2 teaspoon hot paprika, or cayenne, or red pepper flakes – to taste
- 1/4 teaspoon onion powder
Instructions
- To begin, simply combine all of the ingredients in a small jar with a lid.
- Shake to combine.
- Use as you like.
