Once the meat has seared, press the “cancel” button.

While the meat is searing, combine some tomato sauce, green chilis, apple cider vinegar, tomato paste, oregano, cumin, garlic powder and red pepper flakes in a small mixing bowl and whisk those together.

Pour the tomato sauce mixture all over the top. Close and seal the Instant Pot and press the “Meat” button. Adjust the time to run for 35 minutes and let it do its thing.

Once the cycle has completed, you can allow the pressure to come down naturally (about 10 minutes) or do a quick release.

Transfer the meat to a cutting board. Shred or pull apart the beef and top it with sliced black olives.

Ropa Vieja is a very multi-use recipe. You can serve this over Rice, with some mashed potatoes or even in tortillas.
