Ropa Vieja has been a favorite recipe for years in our home. The flavorful beef can be served many ways and is full of flavor. There is very little hands-on prep and the Instant Pot or other brand electric pressure cooker will do all of the work for you.

To make Ropa Vieja you will need:

  • beef chuck roast
  • avocado oil
  • salt
  • pepper
  • tomato sauce
  • green chilis
  • tomato paste
  • oregano
  • cumin
  • apple cider vinegar
  • garlic
  • red pepper flakes
  • sliced black olives
  • Instant Pot
  • tongs

To begin, season the chuck roast with salt and pepper on both sides. Press the “sauté” button on the Instant Pot and add the avocado oil to heat it up.

Place the roast in the hot Instant Pot and sear the meat for about 4 minutes on each side.

Once the meat has seared, press the “cancel” button.

While the meat is searing, combine some tomato sauce, green chilis, apple cider vinegar, tomato paste, oregano, cumin, garlic powder, and red pepper flakes in a small mixing bowl and whisk those together.

When the meat is finished searing, arrange the diced onion and pepper on top of the meat.

Pour the tomato sauce mixture all over the top. Close and seal the Instant Pot and press the “Meat” button. Adjust the time to run for 35 minutes and let it do its thing.

Once the cycle has completed, you can allow the pressure to come down naturally (about 10 minutes) or do a quick release.

Transfer the meat to a cutting board. Shred or pull apart the beef and top it with sliced black olives.

Ropa Vieja is a very multi-use recipe. You can serve this over Rice, with some mashed potatoes, or even in tortillas.

Ingredients
  

  • 1 ½ lb beef chuck roast
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 Tb avocado oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 15 oz tomato sauce, 1 can
  • 7 oz diced green chilis, 1 can

  • 1 Tb ground cumin
  • 1 tsp garlic powder
  • ½ teaspoon red pepper flakes
