To begin, start the rice in your rice cooker. Add the broccoli to the steamer basket and let it begin its cooking cycle.*
Dice the chicken breasts into small pieces (1/2 – 3/4 inch). Sprinkle with the sea salt and pepper.
In a skillet, melt the coconut oil over medium heat. Add the diced red bell pepper. Sauté until the pepper is just tender. Add in the chicken and cook for a few minutes until the chicken is just cooked through.
Sprinkle the Chipotle chile pepper. Add in the cooked rice along with the chicken broth. Mix it all together.
Add in your cooked broccoli and sprinkle with the parmesan cheese.

Notes
If you do not have a rice cooker, cook the rice normally in a saucepan. If your rice cooker doesn’t have a steamer basket, add the broccoli to the skillet with the chicken broth and simmer covered until just tender, then stir in the rice and sprinkle with cheese.
