To begin, you’ll preheat your oven to 350 degrees.
Coat a loaf pan with coconut oil and set it aside for now.
In a mixing bowl, you’ll combine the coconut flour, tapioca flour, arrowroot starch, cinnamon, nutmeg, ginger, baking powder, and salt. Stir those together.
In a separate bowl, whisk the eggs, coconut milk, vanilla extract, maple syrup, and coconut oil together.
Add the liquid mixture to the dry ingredients and whisk to combine.
Stir in the diced apples and chopped pecans.
Spread the mixture into a loaf pan and bake for 45-50 minutes, or until a wooden pick inserted in the center comes out clean.
Cool the bread on a rack, still in the pan, for about 15 minutes. Remove the loaf from the pan and continue to cool until it is room temperature.
