To begin, combing the Jamaican Jerk sauce, honey, a tablespoon of the extra virgin olive oil, grated garlic, zest and juice of the lime. Whisk these all together. Set this aside for the time being.
Heat your grill to 400 degrees.
Now for the chicken. Roll a tender around into a spiral and stick a soaked bamboo skewer through it to hold it in place. If your tenders are too thick to roll, split them in half with a knife making two from the tender.
Repeat this with all of the tenders. Lightly brush all of the lollipops with oil and then sprinkle with salt & pepper.
Place these on the grill and cook for 5 minutes on each side or until they are cooked through. In the last minute of grilling, brush a little bit of the sauce over the chicken.
Serve these simple and tasty appetizers with the dipping sauce.
