Instructions
Combine all of the ingredients in a mixing bowl. Beat this together until the mixture is smooth.
You may need to add a little extra powdered sugar to created a soft dough consistency. If so, add it just a teaspoon at a time with the mixer going.
If you wish to make colored mints, add a couple drops of food coloring to the dough and mix it in.
Roll the dough into balls about the size of marbles and place it on a cookie sheet lined with parchment paper. Flatten them with a fork. You can also roll the dough into 1/2 inch logs and cut into pillows if you choose to do it that way.
Let the mints dry on a cookie sheet or parchment paper overnight. That's it!
Store the mints in your fridge in an airtight container for up to 2 weeks.
