Ingredients

kielbasa
(beef)

medium onion

extra virgin olive oil

diced

stalks celery
diced

cloves
garlic

water

dry split peas

large russet potatoes

teaspoon
salt

teaspoon
pepper

teaspoon
thyme

teaspoon
Italian seasoning

bay leaf
Instructions
To begin, dice an onion, two carrots, and two stalks of celery. Peel and cube 2 large (or 3 medium) russet potatoes. Place them in your slow cooker.
Add in the garlic, broth, water, peas, and seasonings- everything except the kielbasa and butter.
Cover and cook on low for 6-8 hours.
When the soup is nearly finished cooking, dice or slice 1 lb of kielbasa. You could also use smoked sausage if you like.
Brown the sausage in a skillet with a tablespoon of butter if needed. Scoop the sausage out with a slotted spoon and add it to the soup.
Find and discard the bay leaf.
