Ingredients

lb
chuck or round beef roast
cut into 1 inch cubes
1 ½
teaspoon
sea salt
divided
1/1/2
teaspoon
freshly ground black pepper
divided

butter
or other preferred cooking fat, divided

lb
carrots
peeled & sliced
1
yellow onion
diced
½
head
green cabbage
shredded

c
beef broth

c
water
½
c
red wine
8
oz
tomato paste
1
teaspoon
rosemary
1
teaspoon
thyme
2
cloves
garlic
minced
Instructions
To begin, sprinkle the cubed beef with 1 teaspoon each of the salt and pepper
Melt the butter over medium high heat in a large Dutch oven. Cook the beef in the hot butter until browned, work in batches so the meat doesn't steam.
Add in all of the remaining ingredients and stir together. Bring the soup to a boil, reduce the heat to a simmer, cover, and cook for 1 hour.
