To begin, combine 3 cups of the bread flour, and all of the remaining ingredients in the bowl of your electric mixer.
Using the dough hook attachment, begin mixing the ingredients. As the dough mixes, add small amounts of additional flour, as needed to form a soft dough.
Let the mixer run on low speed for 10 minutes.
Cover the bowl and allow the dough to rise for 20-40 minutes, or until it has doubled in size.
Sprinkle a little flour on your counter or working surface.
Turn the dough out onto the floured surface and form a nice ball.
Using a dough knife or other cutting tool, divide the dough into 12 equally sized portions. Each will be about the size of a plum.
Take a portion and flatten it out a little, then fold the edges down, pinching them together on the bottom, and forming a smooth top. (Watch how I do this in the video!)
Place the portion of dough on a baking sheet that is lined with a sheet of parchment paper, smooth side up.
Leave an inch or so in between the rolls, giving them space to rise.
Cover the baking sheet with a light, clean tea towel, and allow them to rise for 30-40 minutes, or until they are doubled in size.
When they are nearly ready, heat your oven to 350 degrees.
Brush the tops of the rolls with a little milk, using a pastry brush.
Bake the rolls for 18-19 minutes, or until they are nice and golden.
Transfer the rolls onto a cooling rack, and let them cool for a few minutes. These rolls can be served warm, or at room temperature.
