In a mixing bowl with a dough hook, combine the water and yeast. Let it sit until the yeast softens and begins to bubble - about 5-10 minutes. Add in the olive oil and a cup of the flour.
Turn your mixer on and add in the salt. Add the remaining flour in a half cup at a time, until it comes together into a soft dough. Take it out onto a lightly floured surface and knead it for about 3 minutes or until it is smooth.
Place the dough ball in an oiled bowl and roll the ball around in the bowl to coat it. Set it in a warm place to rise, covered, for an hour.
To Make the Cheeseburger Roll-Up:
Preheat your oven to 375 degrees.
Fry up the bacon until crispy. Place it on a plate lined with paper towels and set aside.
Next, you will cook together the ground beef and finely diced onion. Drain off any excess grease and set it aside for a moment.
Now grab your pizza dough. Roll or stretch it out into a large rectangle, about 14 x 20 inches.
Top with three tablespoons of the ketchup and classic mustard. You can mix these together first, but I just “eyeball it” and mix it on the dough with the brush that I spread it out with. Spread it to a half inch or so from the edges, all the way around.
Top with your ground beef mixture. Crumble your bacon all over the top. And finally top with a cup of shredded cheese – Colby, Cheddar, Colby jack – any of these work fine. At this point, you can also add raw diced onion, peppers, chopped pickles, or other things you might like in a burger.
Starting on one of the short sides, roll snuggly into a log. Pinch the dough together to seal it shut. Lay the log seam side down on a baking sheet and tuck the ends under.
Whisk the egg and water together in a small dish until frothy. Brush it over the top of the dough.
Top the log the remaining third of a cup of shredded cheese. Don’t worry about making it pretty, just pile it on there. It will melt all down the sides when you bake it.
Pop it in the oven and bake for 25 minutes. Allow it to cool just a couple minutes. Cut into slices with a serrated knife. Serve with additional ketchup and mustard if you like.
