unbleached all purpose flour

baking soda

cinnamon

nutmeg

brown sugar

buttermilk

extra virgin olive oil

teaspoon
vanilla extract

apples
peeled and diced
For Topping

granulated sugar
or brown sugar

cinnamon

butter
unsalted, melted

to coat the pan
Instructions
To begin, preheat your oven to 325°(F).
Coat your 9x13 baking pan well with butter. Set it aside for now.
In a bowl, combine the flour, baking soda, cinnamon, nutmeg and salt. Stir it together and set it aside for now.
In your mixing bowl, combine the brown sugar, buttermilk, egg, extra virgin olive oil and vanilla extract. Beat those together.
Add in your dry ingredient mixture. Mix well.
Fold in the diced apples.
Spread the cake batter into your prepared baking pan.
In a small bowl, combine the topping ingredients and stir together. Sprinkle over the top of the cake.
Bake for 45 minutes or until a wooden toothpick inserted in the center tests done.
Cool the cake in the pan, on a cooling rack. This cake can be served warm or room temperature.
