To begin, start a pot of salted water to cook your pasta in.
Cook the beef bacon until golden brown and crispy. See Note below.
While the bacon is cooking, mince the garlic.
When the water comes to a boil, pour in 1/2 lb of your favorite pasta.” I’m using mini farfalle (bowties) but you can use penne, rigatoni, or any similar pasta.
At the same time, add in the peas. Let those cook until the pasta is done, according to the instructions on your package.
When the bacon is done, remove it to a plate lined with paper towels. Set it aside for now.
Toss the minced garlic into the skillet with the bacon drippings and cook over low heat until tender and just beginning to turn golden. This will only take a few moments.
Pour in the half & half along with the salt & pepper. Bring this to a gentle boil over medium heat, stirring often. Once it begins to boil, add in the shredded Parmesan cheese. Stir until it is melted in and remove the pan from the heat.
Chop the bacon into 1/2 inch pieces.
When the pasta & peas are done cooking, drain them with a colander.
Add the pasta, peas, and bacon to the sauce and stir to combine.
And serve this simple, quick, & delicious supper.
Enjoy!
Notes
This recipe can be doubled to serve the whole family, rather than just a dinner for two.
If your brand of beef bacon (you can also use turkey bacon) is very lean, you will likely need to add a tablespoon or two of duck fat, butter or ghee when browning it.
