Ingredients

c
freshly milled wheat flour
I use hard white wheat
1
teaspoon
baking powder
1
teaspoon
baking soda
1
teaspoon
salt
¾
teaspoon
cinnamon
1 ¼
c
buttermilk
½
c
butter
unsalted, softened
½
c
honey
1
egg
1
teaspoon
vanilla extract
1 ½
c
dried mixed fruit
Instructions
To begin, preheat your oven to 400°(F).
Line you muffin pan(s) with papers, or grease well with butter. Set it aside for now.
Combine the wheat flour, baking powder, baking soda, salt and cinnamon in a bowl. Stir to combine. Set that aside for now.
In your mixing bowl, beat together the buttermilk, honey, egg, and vanilla extract.
Mix in your dry ingredients.
Add in the softened butter, and mix well. Be sure to scrape the sides of the bowl with a rubber spatula.
Stir in the dried fruit.
Scoop the batter into your prepared muffin pan.
Bake for 15 minutes, or until the muffins are golden and test done with a wooden pick.
Cool the muffins on a rack until they are fully cooled, or at least
almost
completely cooled, if you are impatient.
