Ingredients

large onion
diced

cloves
garlic

butter or ghee

beef stew meat

flour
(use tapioca for paleo version)

tomato paste

celery
diced

carrots
sliced

quart
beef broth

c
red wine

teaspoon
sea salt

teaspoon
black pepper

teaspoons
caraway seeds

paprika

Tb
Worcestershire sauce
(or coconut aminos for paleo)

bay leaf
2
lb
potatoes
red or yellow, peeled and cubed (substitute parsnips if you prefer for paelo)
Instructions
To begin, melt the butter in a large pot or Dutch oven over medium heat. Add in the onion and garlic and cook for 1 minute.
Add in the beef and cook until it is just browned on the outside.
Sprinkle the flour all over the meat.
Add in all of the remaining ingredients except the potatoes.
Bring it all to a gentle boil, then reduce the heat to a simmer. Cover and cook for 90 minutes - 2 hours, or until the meat is very tender.
Add in the potatoes (or parsnips). Cook for about 20 minutes longer, or until the potatoes (or parsnips) are tender.
Discard the bay leaf.

Notes
This recipe can also be made with venison or moose instead of beef, if you have a hunter in your family.
