To begin, turn your oven onto the "warm" setting and place a baking sheet inside to keep the pancakes warm as you cook them all.
Combine the apple, banana, almond butter, and eggs in a food processor. Pulse until it is smooth.
Add in the arrowroot flour/starch, baking soda, and vanilla.
Pulse the food processor to combine the ingredients. Scrape the inside of the container with a rubber spatula to make sure everything is combined.
Heat a non-stick griddle or skillet over medium-low heat and melt a tablespoon of coconut oil.
Spoon the batter onto the griddle/skillet and cook for about 3 minutes on each side until they are golden brown on each side and cooked through. Place the cooked pancakes in the oven to stay warm until you have cooked them all.

The pancakes take about 3 minutes per side. Your total cook time for the entire batch will vary by the size of your skillet or griddle and how many you can do at a time.
