If you are cooking the sausage as patties or as browned bulk sausage, I recommend adding a little healthy cooking fat to the pan. This sausage (no matter what kind of meat you choose to use) will be much leaner that typical store-bought bulk sausage.The ground apple helps keep the meat moist while cooking.
