Place matzo sheet(s) on a baking sheet lined with parchment paper.
Spread the pizza sauce all over the sheet of matzo.
Sprinkle it with the cheeses and arrange the pepperoni and olives over the top.
Bake for 8-10 minutes, or until the cheese is melted and golden in spots.

These personal pizzas can be made with any variety of toppings. Play around and have fun with them!If using gluten-free matzo, set your timer for 7 minutes and keep an eye on it. Gluten free matzo works well, but can scorch quicker.
