To begin, you’ll preheat your oven to 375° (F) degrees.
Butter a 10 inch cast iron skillet or similarly sized baking pan. Set it aside for now.
Add your 2 eggs to your mixing bowl and beat them well.
Add in the brown sugar, baking powder, salt, and vanilla extract. Whisk together well.
Stir in the rolled oats.
Add in your milk, a little at a time, stirring well. Add milk until you have a batter the consistency of a thick and lumpy pancake batter.
After you make this, you will get a feel for how much milk you will want. If you want a softer baked oatmeal, you would of course make the batter a touch thinner. I would start with about 1 1/2 cups and then add a little at a time until you get to the right consistency.
Pour your thick batter into your prepared baking pan spreading it evenly.
Bake your oatmeal for 30-35 minutes, or until it is golden brown and slightly crisped around the edges.
Allow the baked oatmeal to rest for about 5 minutes and serve with some fresh fruit and a little drizzle of maple syrup or honey.

Variations of Baked Oatmeal
Here are a few different ways you can change this dish up and get creative:
You can change up this baked oatmeal by adding a half teaspoon of cinnamon.
You could use maple syrup instead of brown sugar.
Sprinkle in a handful of chocolate chips.
Try adding a diced apple and cinnamon to the batter. Maybe drizzle a little caramel sauce over the top and serve it with a scoop of ice cream for an amazing dessert!
