To begin, shred some cheeses and prep ingredients that you may want in your quesadillas. I set up a “quesadilla station” and everyone can make theirs the way they want.
I sautéed some green peppers and shredded some cooked chicken, seasoning it with my homemade taco seasoning. I set up dishes with black olives, black beans, salsa, sour cream, and guacamole as well.
Turn the broiler on in your oven, place a couple tortillas on a baking sheet, and broil them for just a couple minutes or until they begin to get just a little golden. Turn the hot tortilla over, sprinkle on some cheese, chicken, and anything else you might like.
Top it with another tortilla and then pop it back under the broiler for a couple more minutes again until it is just starting to get golden.
Slide them onto a cutting board and cut them into wedges. Then enjoy them with whatever toppings you like!Enjoy!
