2sweet potatoespeeled and cut into about 1/2 inch cubes
1red oniondiced
2green applespeeled, cored, and diced
salt and pepper to taste
Instructions
To begin, brown your sausage in a skillet or other shallow pan. Crumble it a bit as it cooks.
Once it is browned, use a slotted spoon to scoop it out to a bowl. Set it aside for a bit.
If you are using homemade sausage, it may be very lean. You will need about a tablespoon of drippings in the pan. If you don’t have enough, you may need to add a little ghee or coconut oil. If your sausage was bountiful in the drippings, remove the excess.
Cook your diced sweet potato and onion together until it just tender.
Add in the apples and the browned sausage, then cook it together until the apples and sausage are heated through. The apples will retain a nice crunch.
Add some salt and freshly ground black pepper to taste.
