Ingredients
For the Quick Bread

brown sugar

Granny Smith apple
peeled and diced

unsalted, room temperature

For the Sour Cream Glaze (Optional)

powdered sugar

Instructions
For the Quick Bread
To begin, preheat your oven to 350°(F).
Coat your loaf pan well with butter, grease and flour it, or use my baking spray replacement.
In a small bowl, combine the brown sugar and cinnamon. Stir well.
Add in the diced apple and mix to coat. Set it aside for now.
In a bowl combine the all-purpose flour, baking powder, and salt. Stir it together and set it aside for now.
In your mixing bowl, beat the sugar and butter together until nice and creamy.
Mix in the eggs.
Mix in half of the flour mixture.
Add in the milk and vanilla extract, mix well.
Mix in the remaining flour mixture. Be sure to scrape your bowl with a rubber spatula to ensure all of the ingredients are mixed in.
Spread half of the batter in your prepared pan.
Sprinkle in half of the apples mixture.
Spread the remaining half of the batter over the apples and then top with the remaining half of the apples.
Run a butter knife through the batter to swirl the apples slightly into the batter.
Bake for 55-60 minutes, or until the bread tests done with a wooden skewer inserted in the middle.
Cool the bread in the pan for about 10-15 minutes, then transfer to a cooling rack to cool completely.
For the Sour Cream Glaze (Optional)
Combine the sour cream, vanilla extract, and powdered sugar in a small bowl.
Whisk until smooth.
If needed, add just enough milk to make the glaze drizzle-able. Only add a tiny bit at a time, if needed at all.
Drizzle the glaze over the top of the quick bread.
