This delicious bread is lightly sweetened with maple syrup and packed full of diced apples. You will love the flavor in this simple quick bread.

To Make Apple Pecan Bread you will need:

To begin, you’ll preheat your oven to 350 degrees.

Coat a loaf pan with coconut oil and set it aside for now.

In a mixing bowl, you’ll combine coconut flour, tapioca flour, arrowroot starch, spices, baking powder, and salt. Stir together.

In a separate bowl, whisk some eggs, coconut milk, vanilla extract, maple syrup, and coconut oil together.

Add the liquid mixture to the dry ingredients and whisk to combine.

Stir in diced apples and chopped pecans.

Spread the mixture into a loaf pan and bake for 45-50 minutes, or until a wooden pick inserted in the center comes out clean.

Cool the bread on a rack, still in the pan, for about 15 minutes. Remove the loaf from the pan and continue to cool until it is room temperature.

  • 1/2 c tapioca flour
  • 1/2 c coconut flour
  • 2 Tb arrowroot starch
  • 2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 3 eggs
  • 1/4 c coconut milk, full fat
  • 1 teaspoon vanilla extract
  • 1/2 c real maple syrup
  • 2 Tb melted coconut oil
  • 2 apples, peeled & diced
  • 1/3 c chopped pecans
