- salt
- black pepper, freshly ground
- butter
- extra virgin olive oil
- onion
- garlic
- beef broth
- Worcestershire sauce
- thyme
- parsley
- bay leaf
- cold water
- tapioca starch, or arrowroot flour
- Dutch oven or large saucepan
- whisk

To begin, sprinkle sirloin beef tips with salt and pepper.
Heat a tablespoon of butter and extra virgin olive oil in a Dutch oven over medium heat.
Add the meat and brown it on all sides, about 3-4 minutes. Transfer it to a plate or dish.
Add additional butter to the pot and sauté the onion until it is tender, about 4 minutes.
Add in minced garlic and cook another minute.
Add in beef broth, the beef tips, Worcestershire sauce, thyme, parsley and a bay leaf.
Bring it all to a boil, then reduce the heat to a simmer. Let it cook uncovered for 30-40 minutes or until the beef is nice and tender.
Remove the bay leaf.

Thicken the Gravy
Briefly bring the beef tips & broth up to a boil again.
Combine cold water and tapioca starch in a small dish and whisk smooth.
Pour in the tapioca slurry and stir. Allow it to cook 1 minute to thicken.
Traditionally beef tips are served over egg noodles, mashed potatoes or rice.
Serve your beef tips with cauliflower rice for paleo/keto.

- 3 cloves garlic, minced
- 4 c beef broth, or stock
- 2 Tb Worcestershire sauce
- ½ teaspoon thyme, dry
- 1 bay leaf
- 1 teaspoon parsley, dry
For Thickening the Gravy
- ¼ c cold water
- 3 Tb tapioca starch, or arrowroot flour
Instructions
