These sourdough discard crackers are incredibly delicious. You can get creative with all sorts of seasonings and use this recipe for countless cracker varieties.
For this version, I chose to use some homemade “everything bagel” seasoning, but you could use just sea salt, some parmesan cheese, Italian seasoning…get creative!
To make these Sourdough Crackers you will need:
- sourdough discard
- all-purpose flour, unbleached, organic preferred
- everything bagel seasoning
- extra virgin olive oil
- sea salt
- pastry brush
- rolling pin
- parchment paper
- kitchen scale
- baking sheet

It is important to weigh your ingredients for this recipe with a kitchen scale, so the measurements are given in grams.
To begin, combine sourdough discard, all-purpose flour, seasonings, and extra virgin olive oil in a mixing bowl. Stir together.
Turn the dough out onto a lightly oiled surface and knead for about a minute.
Place the dough into a lightly oiled bowl and allow it to rest for 30 minutes.
Preheat your oven to 400°(F).
Place the dough on a lightly floured sheet of parchment paper that is the size of your baking sheet. Sprinkle with a tiny bit of flour.
Roll the dough out onto the parchment paper, getting it an even thickness and as rectangular as possible.
Use a pizza cutter to cut the dough into crackers that are about 1 1/4-1/2 inch squares.
Poke each cracker with a fork.
Slide the parchment paper onto your baking sheet.
Very lightly brush the tops of the crackers with a little additional extra virgin olive oil. Sprinkle with salt if you choose to.
Bake the crackers for anywhere between 8-20 minutes, or until they are just lightly golden. Watch carefully to make sure they do not burn.
Cool completely and enjoy! Store the crackers in an airtight container.
