Ooey Gooey Turtle Crumbles with an oat crust and topping and caramel filling are a so good, you may just call them ridiculous.
They also happen to be ridiculously easy to make. Make them today and enjoy the praises from your family.
I was in the grocery store recently and found this: caramel sweetened condensed milk. Now this isn’t a sponsored post or anything, but when I saw this, I knew I needed to take a can home and see what creative thing I could do with it. The result…well, let’s just say that my son ate half of the pan before the day was over.
To begin, preheat your oven to 375 degrees.
In your mixing bowl, combine 1 1/4 cup all-purpose flour, 1/2 cup brown sugar, 1/4 teaspoon each of baking soda and fine sea salt, and 1 cup of rolled oats. Give these a stir to combine. Add in 1 stick (1/2 cup) of unsalted room temperature butter. Mix this until it forms a crumbly mixture. Set it aside for a moment.
Grease a 9×9 baking dish. Line it with parchment paper, leaving the sides longer so that you can remove the bars from the pan by lifting them out by the paper. Grease the paper as well.
Take have of your oat mixture and firmly press it into the bottom of your pan.
Bake this for 10 minutes.
Meanwhile, finely chop 1/3 cup of pecans. Stir the chopped pecans into the remaining oat mixture.
When it has finished baking, immediately pour the caramel sweetened condensed milk all over the hot crust. Note: If you can not find caramel sweetened condensed milk, you can use 1 1/2 cup store bought Dulce de leche instead.
Sprinkle the remaining oat mixture over the top.
Sprinkle 1/3 cup chocolate chips (I used bittersweet chips) all over the top. Gently pat the chips and topping into the filling, smoothing out the top as best you can.
Bake for an additional 20 minutes or until just golden on top.
Allow this beauty to cool completely to room temperature before cutting into bars.
