This old-fashioned style apple cake has grated apple inside, sliced apples on top and is baked in a cast iron skillet. It is then finished off with a drizzle of lemon glaze.
A couple of times a month, I like to make a dessert for Shabbat dinner. That is the Friday evening meal that welcomes in the biblical sabbath.
I always like to cook a nice meal, often I’ll bake Challah, and make something lovey to wrap it up. Most recently, I made this rustic and delicious Skillet Apple Cake. I generally just use whatever apples I have on hand to make this, whether it is Gala, Granny Smith, Honeycrisp or anything else.

To Make this Recipe You will Need:
- 2 apples (Gala, Granny Smith or other preferred baking apple)
- all-purpose flour
- baking powder
- cinnamon
- salt
- dry ginger
- ground nutmeg
- eggs
- granulated sugar
- brown sugar
- milk
- extra virgin olive oil
- vanilla extract
- powdered sugar
- lemon juice
- 12 inch cast iron skillet
- mixing bowls
- whisk
- parchment paper
- grater
- cutting board
- knife
- cooling rack

How to Make Skillet Apple Cake
To begin, preheat your oven to 325°(F).
Line a 12 inch cast iron skillet with parchment paper. Lightly spritz the paper with oil, or brush it with 1 Tb melted butter. Set it aside for now.
Grate one of the apples into a small dish, discarding the core.
The other apple, you will cut into 1/4 inch slices, horizontally through the apple. Carefully remove any seeds from the apple slices. Set these aside for now.
In a bowl, combine the flour, baking powder, cinnamon, salt, ginger and nutmeg. Stir these together and set aside for a moment.
In your mixing bowl, lightly beat 3 eggs with a whisk.
Add in brown sugar, granulated sugar, milk, oil and vanilla extract, whisk these all together.
Add in the dry ingredient mixture, and whisk until just combined.
Fold in the grated apple.

Pour the cake batter into your prepared pan.
Arrange the apple slices on top of the cake.
Bake for 45-50 minutes, or until the cake tests done with a wooden toothpick.
Set the cake on a rack to cool completely.
Make the Lemon Glaze
When the cake is cooled, whisk powdered sugar, lemon juice and vanilla extract in a small bowl or dish.
If the glaze is too thick, add a tiny bit of water – 1/2 teaspoon at a time – until it is the right consistency.
Drizzle the lemon glaze all over the top of the cake.

Skillet Apple Cake with Lemon Drizzle
Ingredients
For the Cake
- 2 apples, Gala, Granny Smith or other preferred baking apple
- 2 1/4 c all-purpose flour
- 1 Tb baking powder
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon dry ginger
- 1/4 teaspoon ground nutmeg
- 3 eggs, beaten
- 1 c granulated sugar
- 1/2 c brown sugar, light or dark
- 3/4 c milk
- 1/2 c extra virgin olive oil
- 1 1/2 teaspoon vanilla extract
For the Glaze
- 1/3 c powdered sugar
- 2 teaspoons lemon juice
- 1 1/2 teaspoon vanilla extract
For the Pan
- 1 Tb butter, melted or
- 1 teaspoon oil, for spritzing (approximate)

- Set the cake on a rack to cool completely.
- When the cake is cooled, whisk the glaze ingredients in a small bowl. If the glaze is too thick, add a tiny bit of water – 1/2 teaspoon at a time – until it is the right consistency. Drizzle the lemon glaze all over the top of the cake.
