I really can not stand insanely sweet frosting on cakes. I want to taste the cake and the ingredients. I don’t want the sugar to be so overpowering that it is all you can taste. This incredibly creamy Vanilla Buttercream Frosting is my favorite for that very reason.
To begin, beat 2 1/2 sticks (1 1/4 cup) very soft, unsalted butter in your mixing bowl. Beat until nice and fluffy – about a minute on high.
Mix in 2 1/2 cups of powdered sugar. Mix for one minute on medium speed, scraping the bowl with a rubber scraper periodically. Add in a pinch of fine salt, 2 tablespoons of half & half, and 1 tablespoon of vanilla extract. Mix on medium speed for 1 minute and then increase to high speed and mix for another 2-3 minutes, or until fluffy and creamy.
Mix in coloring if you like and use as desired.

- 2 Tb half & half
- pinch fine salt

- Add in the remaining ingredients. Mix on medium speed for 1 minute and then increase to high speed and mix for another 2-3 minutes, or until fluffy and creamy.
- Mix in coloring if you like and use as desired.
