Savory Carrot Fritters are a healthy and delicious way of including carrots as a side dish.

These fritters are pan seared in a little bit of cooking oil and use cassava flour and a little bit of sharp cheddar cheese to help bind the shredded carrots together.
To Make your Savory Carrot Fritters You Will Need:
- carrots
- red onion
- egg
- garlic
- heavy cream
- sharp cheddar cheese
- fresh parsley
- salt
- pepper
- cassava flour
- oil
To begin, you’ll line a baking sheet with a couple layers of paper towels. Turn your oven on to the “warm” setting and place the lined baking sheet inside.
As you cook the fritters, you will place them in there to stay warm while you cook the rest of them. The paper towels will absorb any excess oil from the fritters.
In a mixing bowl, you’ll need to whisk an egg.

Thinly diced red onion gives these carrot fritters a great punch of flavor.
All of the ingredients are simply mixed together. The mixture will not have a lot of batter to it, as the carrots are the star of the show here.
Place enough oil in a skillet to cover the bottom with a thin layer. You can use a cast iron skillet as long as it is well seasoned. If your cast iron seasoning is questionable, use a non-stick skillet.
What kind of oil?
You can use which ever kind of oil you prefer to use. I like to use coconut oil or avocado oil, but you could also use extra virgin olive oil if you like.
The fritter “batter” is placed in the hot with tongs to create little piles that will begin to cook and stick together. Cook them over medium heat for about 4 minutes and the gently turn them over to cook on the other side until the fritters are nicely golden brown.
As they are cooked, place them on the lined baking sheet in your oven.
Repeat the process until you have used all of the carrot mixture. This recipe will make 10-12 fritters.
The fritters should be eaten right away once they are all finished being cooked. Of course, you won’t want to hesitate to dive into these gorgeous orange patties anyways.
