Homemade Beef Lo Mein from Cosmopolitan Cornbread

To begin, you will need 8 ounces of long noodles. You can use spaghetti noodles, or head to your local Asian market and pick up some lo mein noodles. Today I used Philippine-style noodles. Cook them according to package directions until just done.

Thinly slice a 1 pound flank steak into strips. Toss it in a bowl with a tablespoon of cornstarch to coat it.

In a large skillet or wok, heat a tablespoon of coconut oil over medium high heat. Toss in the beef and cook until just browned. Add in a teaspoon each of grated fresh ginger and garlic. Stir it in.

Add in 4 cups of frozen stir-fry vegetables along with 2/3 cup beef broth and a tablespoon of brown sugar. Cover the wok/skillet and steam the vegetables over medium heat for about 4-5 minutes, or until they just begin to get tender.

Stir in 1 tablespoon of soy sauce and a teaspoon of sesame oil.
