Last week someone from a local farm posted in a local Facebook group that they would be selling 25 pound cases of tomatoes for $16 – well, I couldn’t pass up a good deal on locally grown goodies like this! So I ordered two cases. Fifty pounds of gorgeous tomatoes!
So today was the pick-up day for them, and as soon as I got home I began the process of preserving all this goodness. I am doing a combination of dehydrating and canning all of these tomatoes. If I had a better dehydrator (bigger) I would dry more of them, but I’ll probably only be doing a handful. Slice them thin, sprinkle with salt and herbs and dry. They make a great snack and can be broken up and dropped into soups or stews.
While those were drying, I got to canning! All I can say is – thank goodness for air conditioning!
At the end of the evening, I had 6 quarts and 4 pints of tomatoes canned. 20 pounds down – 30 more to go! …tomorrow!
But one last note…having this pile of seedy goodness really makes me miss having chickens. My girls would have had a hay day with this! I can’t wait, I can’t wait!

Those are beautiful! My tomato plants are not doing very well yet, but the green beans? Oh my! Out of my 2 thirty foot rows I got 56 pints my first picking. The good thing is with so many I will barter for fruit to can. Happy canning!
