Apple Scones from Cosmopolitan Cornbread


To begin, preheat your oven to 425 degrees.

Combine 1 1/2 cup all-purpose flour, 1/2 cup whole wheat flour, 1/3 cup brown sugar, 2 tsp baking powder, a tsp cinnamon, and a 1/2 tsp each of baking soda, nutmeg, and salt in a bowl.

Add in 1/4 cup of cold unsalted butter that has been cut into pieces. With a pastry blender, cut the butter into the flour mixture until it is crumbly. Set it aside a moment.

Core and dice one tart apple, such as a Granny Smith.

Stir the diced apple into the flour mixture.

Stir in 2/3 cup of milk, until just combined. Turn the dough out onto a lightly floured surface and knead gently 6-7 times.

Divide the dough in half and form into two 6-inch disks. Cut the disks into 6 wedges.

Place the wedges on a lightly greased or nonstick baking sheet. Brush the tops with milk.

Sprinkle with  1/4 teaspoon each of demerara sugar. Bake for 12-15 minutes or until golden. Serve warm.

Ingredients
  

  • 1 1/2 c all-purpose flour
  • 1/2 c whole wheat flour
  • 1/3 c brown sugar
  • 2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 c unsalted butter, cold, cut into small pieces
  • 1 tart apple, such as Granny Smith
  • 2/3 c + 2 Tb milk, divided
  • 3 tsp demerara sugar, divided

Notes

You can also use just all-purpose flour instead of the whole wheat, if you don’t have it on hand.
