Rich Peanut Butter Bread with Chocolate Chips. This easy quick bread is a peanut butter lover’s delight!

To Make this recipe you will need:
- all-purpose flour
- baking powder
- salt
- peanut butter
- eggs
- milk
- granulated sugar
- brown sugar
- vanilla extract
- chocolate chips
- peanuts
- loaf pan
- mixing bowl/mixer
I was recently invited on a trip to southern Alabama by the Alabama Peanut Producers Association. This was for the 2021 Alabama Peanut Tour and, I have to say, it was such a great time!
I learned all about the growing process for peanuts, many of the unexpected health benefits of them, as well as some of the challenges of harvesting them.
By the way, did you know that 2/3 of all the peanuts in America (think peanut butter, candy bars, etc.) are grown within 100 miles of Dothan, Alabama?
The reason for that is the soil. This part of the country has the perfect, sandy soil for growing peanuts.
Not only that, but farmers are at the mercy of the weather to be able to even harvest them. The weather and the soil can’t be too wet or too dry. Otherwise crops can be damaged or even lost.
We were shown how peanuts were harvested “back in the day” by hand and stacked on posts to cure & dry. We were also shown how they are harvested today with high tech equipment.
And not going to lie, I was kind of drooling over that tractor that I got a ride in. It’s much bigger and fancier than our “Red.”
One of the days of the trip, we went to nearby Enterprise, Alabama. People often wonder why there is a “bug monument” in downtown Enterprise. But it is actually a testament to overcoming adversity.
Many years ago, boll weevils…those evil little crop-destroying pests, invaded. At the time, cotton was the primary crop grown and all of the farmers were facing devastating loss.
Then someone came into town and suggested they start growing peanuts. That’s how peanuts came to Alabama and it took off from there! A nearby restaurant even has an “Evil Weevil” peanut cocktail.
On the tour, we also visited the historic Landmark Park. My friend Lynda and I talked about how we would both love to replicate the homestead for ourselves. It was just lovely!
It was such a lovely trip. And getting to meet the farmers who grow many of the peanuts we enjoy, hearing their stories – the challenges and achievements, makes me love peanuts all the more.
Going on this trip and learning all about the history, growing process, and even the nutritional value & health benefits of peanuts has inspired this rich and flavorful quick bread recipe.
How to Make Chocolate Chip Peanut Butter Bread

To begin, preheat your oven to 350 degrees.
Grease & flour a standard loaf pan (about 8.5×4.5 inch.) Set it aside for now.
NOTE: I coat all of my baking pans with Baking Spray Replacement
In your mixing bowl, combine eggs, milk, peanut butter, sugars, and vanilla extract. Mix them together.
In another bowl, combine flour, baking powder, and salt. Stir them together.
Add the flour mixture to the peanut butter mixture. Beat well to combine. Make sure to scrape the bowl with a rubber scraper.

Add most of the chocolate chips to the batter, reserving about a tablespoon of the chips. Fold the chips into the batter.
Spread the batter into your prepared pan, smoothing the top.
Sprinkle the remaining chocolate chips and the chopped peanuts over the top of the batter.
Bake for 50-55 minutes, or until the loaf tests done with a wooden skewer.
NOTE: If the bread begins to get a little too brown, carefully form a tent of aluminum foil over it to shield it from the direct heat.
Cool the loaf in the pan, on a cooling rack, for about 10 minutes.
Remove it from the pan and cool completely.

- ⅓ c granulated sugar
- ⅓ c brown sugar
- ½ teaspoon vanilla extract
- 1 ¾ c all-purpose flour
- 1 Tb baking powder
- 1 teaspoon salt
- ½ c chocolate chips, divided use
- 1 Tb roasted peanuts, finely chopped
