An old-fashioned cake recipe for a moist and tender oatmeal cake, topped with a brown sugar glaze and toasted coconut.
A few years ago, after my mother-in-law passed away, I was in her kitchen when I came across a hand-written recipe card.
I immediately recognized her handwriting and decided that this needed to be kept and made some day.

I recently came across that recipe card and for weeks had been thinking about making it. That time finally came.
This oatmeal cake is incredibly moist and tender with a hint of cinnamon.
I topped it with a brown sugar glaze and toasted coconut, as inspired by the notes on the back of the card.
To Make This Recipe You Will Need:
- boiling water
- rolled oats
- butter
- brown sugar
- eggs
- vanilla extract
- salt
- baking soda
- cinnamon
- all-purpose flour
- half and half
- toasted coconut
- mixing bowls
- whisk
- 10″ cast iron skillet or cake pan
- saucepan
- cooling rack

To begin, combine boiling water and oats in a small bowl. Allow this to sit for 30 minutes.
Preheat your oven to 350°(F).
Butter a 10 inch cast iron skillet or cake pan. Coat the sides and bottom well. Set it aside for now.
In a small bowl combine all-purpose flour, cinnamon, salt, and baking soda. Stir it together and set it aside for now.
In your mixing bowl, lightly beat 2 eggs.
Add in brown sugar and granulated sugar, melted butter, and vanilla extract. Whisk together.
Add in the soaked oats and stir together.
Add in the flour mixture and whisk until combined.
Spread the batter in your prepared pan.
Bake the cake for 25-30 minutes, or until it tests done with a wooden skewer/toothpick.
Allow to cake to cool on a rack.
When the cake is cooled, prepare the glaze.

Making the Brown Sugar Glaze
Combine the brown sugar, granulated sugar, butter, and half and half in a small saucepan. Cook and whisk this over medium low heat until it boils and thickens. It will be very foamy. Stir continually.
Add in vanilla extract and continue to stir and cook for 1 more minute.
When the glaze thickens, allow it to cool for about 5 minutes, then drizzle it all over the cake.

- 1/4 c butter
- 1/4 c half and half
- 1 teaspoon vanilla extract
For Topping
- 2/3 c toasted coconut
