Moist and tender coffee cake with the scrumptious flavor of apple and a streusel topping. You’ll love starting your morning with a cup of coffee and a piece of this cake.
In the past when I made this recipe, I used to use apple slices.
Since then I changed that to diced apples. It is easier to serve the cake and easier to eat it.
The cake is topped with the diced apples and a delicious, brown sugar and pecan streusel.
To Make this Recipe You will Need:
- all-purpose flour
- baking powder
- salt
- unsalted butter
- granulated sugar
- vanilla extract
- egg whites
- milk
- Granny Smith apple
- brown sugar
- cinnamon
- pecans
- mixing bowls
- 9×13 inch baking pan
- whisk

To begin, preheat your oven to 350°(F).
Grease a 9×13 inch cake pan. Set it aside.
In a bowl, combine flour, baking powder, and salt.
Place room temperature, unsalted butter in a mixing bowl, along with granulated sugar and vanilla extract. Beat those together until smooth.

Mix in half of your flour mixture, then milk, and then the rest of the flour mixture. Combining each addition completely before the next. Set it aside.
In a bowl, beat the egg whites until they are stiff.
Carefully fold these into the thick batter, until just combined.
Spread the batter into the cake pan.
Peel and dice an apple and arrange it over the top of the cake batter.
For the Topping
In a bowl, stir together flour, brown sugar, cinnamon, and chopped pecans. Add in butter. Mix until this is completely combined and crumbly. I find that this mixes best with a whisk or a fork.
Sprinkle the mixture all over the top of the apples.
Bake this cake for about 40 – 50 minutes until the cake is firm in the middle, or tests done when stuck with a toothpick.
Allow it to cool slightly on a rack and then enjoy.
The cake can be served warm or room temperature.

- 1 1/4 c milk
- 1 Granny Smith apple
For the topping:
- 3/4 c butter, unsalted, room temperature
- 1 1/2 c brown sugar
- 3/4 c all-purpose flour
- 2 1/2 teaspoon cinnamon
- 1 c chopped pecans
Instructions

- Grease a 9×13 inch cake pan. Set it aside.
- In a bowl, combine the flour, baking powder, and salt.
- Put the first stick and a half of butter in a mixing bowl, along with sugar and vanilla. Beat those together until smooth.
- Mix in half of your flour mixture, then your milk, and then the rest of the flour mixture. Combining each addition completely before the next. Set it aside.
- In a bowl, beat the egg whites until they are stiff.
- Carefully fold these into the thick batter, until just combined.
- Spread the batter into the cake pan.
- Core and slice up the apple. I leave the skin on, but that is up to you.
- Arrange the slices over the top of the cake batter.
- In another bowl, stir together the 3/4 cup of flour, brown sugar, cinnamon, and the chopped pecans. Add in the remaining butter. Mix until this is completely combined and crumbly. I find that this mixes best with a whisk or a fork.
- Sprinkle the mixture all over the top of the apples. Bake this cake for about 40 – 50 minutes until the cake is firm in the middle, or tests done when stuck with a toothpick.
- Allow it to cool slightly and then enjoy.
- The cake can be served warm or room temperature.

I made this cake this morning. Super simple instructions. Being disabled I can no longer make complicated recipes. This is delicious! I can’t keep my hands out of this cake. Every time I walk by the cake I have to force myself to not cut a small piece. This recipe is a keeper!

I love making coffee cakes. They are no fuss, rustic, delicious desserts. Apples season is just getting started here…so I have lots of great apples to choose from to make this great sounding cake.
Anything with apple in it is awesome, but combining this with coffee cake – a match made in heaven!
