Prep Time 15 minutes
Cook Time 50 minutes
Total Time 1 hour 5 minutes

Ingredients

For the cake:

  • 3 c flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 1/2 sticks (3/4 c) unsalted butter, room temperature
  • 1 2/3 c sugar
  • 1 tsp vanilla
  • 3 egg whites
  • 1 1/4 c milk
  • 1 Granny Smith apple

For the topping:

  • 1 1/2 sticks (3/4 c) unsalted butter, room temperature
  • 1 1/2 c brown sugar
  • 3/4 c flour
  • 2 1/2 tsp cinnamon
  • 1 c chopped pecans

Instructions

  1. To begin, preheat your oven to 350 degrees.
  2. Grease a 9×13 inch cake pan. Set it aside.
  3. In a bowl, combine the flour, baking powder, and salt.
  4. Put the first stick and a half of butter in a mixing bowl, along with sugar and vanilla. Beat those together until smooth.
  5. Mix in half of your flour mixture, then your milk, and then the rest of the flour mixture. Combining each addition completely before the next. Set it aside.
  6. In a bowl, beat the egg whites until they are stiff.
  7. Carefully fold these into the thick batter, until just combined.
  8. Spread the batter into the cake pan.
  9. Core and slice up the apple. I leave the skin on, but that is up to you.
  10. Arrange the slices over the top of the cake batter.
  11. In another bowl, stir together the 3/4 cup of flour, brown sugar, cinnamon and the chopped pecans. Add in the remaining butter. Mix until this is completely combined and crumbly. I find that this mixes best with a whisk or a fork.
  12. Sprinkle the mixture all over the top of the apples. Bake this cake for about 40 - 50 minutes, until the cake is firm in the middle, or tests done when stuck with a toothpick.
  13. Allow it to cool slightly and then enjoy.
  14. The cake can be served warm or room temperature.
  15. Enjoy!
